Most convection ovens are slow. They spend all their time heating up the air, and then that air has to somehow convince your food to get hot. It takes forever. We do things differently. We use shortwave infrared (IR) bulbs that skip the middleman. Instead of heating the air, they shoot energy straight into the food. We’re talking about jumping from room temperature to 300°C in a matter of seconds. No more standing around waiting for a pre-heating cycle to finish. How it actually works It all comes down to a tungsten filament inside a high-purity quartz tube. Traditional heating elements have to warm up everything around them first. Not these. These bulbs shoot out photons that dive right into the dough or pastry. The result? An instant crust. You get a massive amount of heat concentrated exactly where the food is sitting. The nitty-gritty on the hardware Commercial kitchens are brutal—they’re hot, humid, and messy. That’s why we house these bulbs in stainless steel frames. We also picked a specific quartz glass that won’t crack when the temperature swings wildly. One quick tip if you’re installing these:**Watch your connectors.**Make sure they are tight. If they’re loose, you’ll get arcing, and your bulbs will burn out way faster than they should. We also apply special coatings to the quartz. This stops the heat from just scorching the surface and helps it soak deeper into the product. The trade-offs (Because nothing is perfect) Here’s the catch. These bulbs pack a huge punch in a tiny space, which means they put a lot of pressure on your power supply. You also can’t just “set it and forget it.” You need a PID controller that’s tuned just right. If your settings are off, you’ll blast right past 300°C and end up with a tray of charcoal. Plus, make sure your ventilation is up to the task, because the ambient temperature spikes fast. It takes a bit of calibration to get it perfect, but once you do, the consistency is incredible.
